药食同源—— 药膳起源
药膳起源与药物、火、盛器的起源相关。远古时期,生产力低下,先民“茹毛饮血”,采集野果、种子,掘取植物根茎和捕获猎物,逐渐发现某些动植物不仅可以充饥,还有减轻身心不适的作用,进而将这些动植物称为药物。旧石器时代,人类开始用火;新石器时代,随着陶器出现,人类可以煎熬药物和烹蒸食物,药膳产生的条件齐备了。
药膳正式产生离不开中国先祖神农。《淮南子·修务训》载:“神农乃始教民播种五谷,……尝百草之滋味,识水泉之甘苦,令民知所避就,当此之时,一日而遇七十毒。”知避就,是指懂得合理利用药物的性能。这为后世本草学的形成打下基础,也是中医“药食同源”最早的缘起,为后世药膳食疗发展奠定了基础。
Medicine and food share the same source
Speaking of the origin, medicated diet is closely associated with medicine, fire and receptacles. In remote antiquity, our ancestors had to eat raw meat and drink blood. During the life activities of collecting fruits, digging roots and hunting animals, they discovered accidentally some food, in addition to filling one’s stomach, could alleviate pain and discomfort.
Thereafter, these special kinds of food were deemed as medicine. People learned to use fire in the Paleolithic Age; while, in the Neolithic Age, the invention of pottery made it possible for them to decoct medicine and cook food.
Medicated diet owes a great deal to Shen Nong (literally means “Divine Farmer”). The Huai Nan Zi - Xiu Wu Xun (The Necessity of Training, Huai Nan Zi) records, “Shen Nong taught people to taste herbs and identify water sources; ... ... he once ran across seventy poisonous herbs in a single day, whereby medicine sprung up.” People were also taught how to use herbs appropriately, which laid a foundation for herbal medicine and medicated diet. This later resulted in a distinctive concept—food and medicine share the same source.

药物:能帮助人体恢复和保持稳定有序状态的物品,文中主要指中草药,以植物类居多。
药食同源:指许多食材即药材,它们之间并无绝对的分界线。

Food and medicine sharing the same source: There is no sharp line of demarcation between food and medicine. Some food are used as medicine, or vice versa.
宰相伊尹—— 药膳鼻祖
火的运用及陶器、制酒的发明,产生了较为复杂的烹调技术,出现了汤液醴。商代宰相伊尹,原是汤王厨师,精于烹调,又通晓药性,始创汤液疗法,曾著《汤液经》一书,记录如何采用烹调方法制药疗疾。
《吕氏春秋·本味篇》载伊尹与商汤谈论烹调:“调合之事,必以甘酸苦辛咸,先后多少,其齐甚微,皆有自起”,强调药膳烹调要注意用量和先后;“阳朴之姜,招摇之桂。”指出姜桂既是食物也是药物,是温胃散寒的保健食品。因此,伊尹被尊为食疗药膳之鼻祖,推动了药膳的发展。
Father of the Food Therapy-Yi Yin
The use of fire and invention of pottery and wine contributed to the cooking techniques, decoctions and sweet wine. The chancellor of Yi Yin in the Shang Dynasty was King Tang’s former cook, who excelled in cooking food and using medicines and thus created decoction therapy. The book of Tang Ye Jing (Classic on Decoctions) by him documented treatment of diseases with different cooking techniques.
The Lu Shi Chun Qiu - Ben Wei Pian (Chapter of Original Tastes, Lu’s Spring and Autumn Annals) in the Qin Dynasty recorded conversions between Yi Yin and Tang (King of Shang) on culinary arts: “Combination of foods involves the sequence and amount of different flavors (sweet, sour, bitter and salty)”. “It’s advisable to use ginger from Yangpu (somewhere in Sichuan Province) and cinnamon from Zhaoyao (a southern mountain in ancient China) to make the food taste delicious. Apart from their dosage and sequence, the text also states ginger and cinnamon are both food and medicine to warm the stomach and dissipate cold. Yi Yin was later addressed respectfully as the father of food therapy.

专著丛生—— 药膳发展
秦汉以后,随着医药学的进步,药膳也随之发展。现存最早中药学专著《神农本草经》提出,人参、石斛等上品药物久服能轻身延年。
现存最早的中医典籍《黄帝内经》载方13 首,药膳方6 首。其中最典型的药膳如乌鲗骨丸,由藘茹、乌鲗、麻雀卵、鲍鱼组成,用于治疗血枯病,将前3 味共研为丸,用鲍鱼煎汤送下,虽是药用,但也可谓美味佳肴。
东汉名医张仲景著《伤寒杂病论》,载有猪肤汤、百合鸡子汤、当归生姜羊肉汤等多首药膳方,还在杂病部分对“食禁”作专门阐述,书中举例:“凡肉及肝,落地不着尘土者,不可食之”,“果子落地,经宿、虫蚊食之者,人大忌食之”。这说明张氏不仅认识到药借食力、食助药威的道理,还认识到药膳也不可妄用。
Numerous books on Medicated Diet
Since Qin and Han Dynasties, medicated diet had co-flourished with Chinese medicine.China’s earliest monograph on herbal medicine –Shen Nong Ben Cao Jing (Shen Nong’s Herbal Classic) put forward that top-grade medicines such as Ren Shen (Ginseng) and Shi Hu (Herba Dendrobii) could be taken for long to benefit the body and prolong life.
Among the 13 formulas recorded in Huang Di Nei Jing (the Yellow Emperor’s Internal Classic), the earliest extant medical work, 6 were about dietary recipes. The most typical one is Wu Zei Gu Wan (Cuttle Bone Pill) for blood depletion. This recipe consists of Lu Ru (Radix Rubiae), cuttlefish, sparrow egg, and abalone. Grind the first three ingredients into fine powder to make pills, prepare the abalone into soup, and then take them together as a delicious dish.
